A big pot of this soup on a cold winter day (finally we are having cold days!) is such a satisfying dinner. Made with oxtails – which makes it rich and delicious (I also add beef shanks) – and the bonus is all the vegetables like carrots, onions, celery, and fresh thyme, not to mention the hearty barley!
