soup of the week: wild mushroom with Farro

This soup is hearty and filling even with no meat! Made with mushrooms, pancetta, lots of vegetables, and farro (farro is a whole grain) is really hearty. If you don’t have time to eat it right away (though I don’t know how you could resist!) you can refrigerate it, and then reheat it and it’s just as delicious.
